Herbs are plants with savory or aromatic properties that are used for flavoring and garnishing food, for medicinal purposes, or for fragrances; excluding vegetables and other plants consumed for macronutrients. Culinary use typically distinguishes herbs from spices.
The herbs most commonly used in Persian cooking are dill, mint, parsley, cilantro, basil, chives, fenugreek, and tarragon, while marjoram and oregano make occasional appearances. Plants are precious creatures that besides their roles in human nutrition, visual beauty, oxygen supply, and air purification, have a significant role in the treatment of diseases .Using different kinds of herbs as medicine has been common scientifically from the distant past and Iranian well-known scientists such as Avicenna, Zakariya Razi, and Abu Rayhan Biruni had written quality books in the field of medicinal herbs. Among the most important of these books The Canon of Medicine by Avicenna can be mentioned. This book has been translated into different languages such as Latin, Arabic, English, French, and German. Due to technological advancements, chemical medicine has replaced with herbal medicine over time. Although, today, the use of chemical drugs is more common, the side effects are unavoidable. Since human is always perfectionist, he is returning to use medicinal herbs in pharmacy industry. Iran is one of the best places to grow a variety of plants due to its climate condition and geographical location. Therefore, many pharmaceutical companies are purchaser of medicinal herbs of Iran.
